Choc Mint Slice Recipe

I love to make a batch of these for the week to have on hand. Knowing exactly what goes into your food (minus the additives, fillers, preservatives...) and focusing on whole foods is one the best ways to take control of your health. An added bonus is that they are super quick to whip up!


This slice is not only delicious but a great way to support optimal digestive and hormone health. Here's why:

  • They contain plenty of sesame seeds and walnuts which are phytoestrogens; helping to balance your overall oestrogen levels

  • Healthy fats from coconut, nuts and seeds are required for the body to make hormones and regulate blood sugar (important for a healthy cycle)

  • Buckwheat groats are a great gluten free grain, incredibly rich in fibre. A special kind of fibre called resistant starch that resists digestion, arriving at the large intestine intact where it feeds the good bacterial living there

  • Peppermint essential oil (organic, food grade only) when used in small amounts (and carefully) can have an antispasmodic effect on the digestive tract; reducing spasm, bloating, wind and abdominal pain.



Ingredients

1 cup activated buckwheat groats

5 tbsp raw cacao powder

1/4 cup desiccated coconut

1/2 cup raw pecans/walnuts, roughly chopped

1/4 cup pepitas

1/4 cup sesame seeds

1/4 tsp finely ground salt

5 tbsp honey

5 tbsp coconut oil

1 tsp tahini

4 drops peppermint essential oil (organic, food grade) OR 1 tsp peppermint extract


Method

Combine all dry ingredients in a bowl. Melt honey, coconut oil and tahini in a pot until they are mixed and become a liquid consistency. Add the liquid to the dry ingredients and mix well. Pour into baking paper lined tray and store in the fridge for 4 hours before cutting into pieces.
