Peanut Protein Ball Recipe

I love a high protein snack that has MINIMAL ingredients, emphasis on the minimal. Too many pre-made, packaged 'high protein' snacks are full of long lists of ingredients (including fillers, emulsifiers, preservatives, binders, colours) with a tiny little bit of protein added for good measure. The problem is, a lot of those extra added ingredients are inflammatory and difficult to digest. These peanut protein balls are made from 4 simple ingredients, are delicious, will keep you full between meals and can be stored in the freezer so that they last you a little longer. I love to buy the exact amount of these ingredients from The Source when I'm planning to make up a batch, so handy.

Ingredients
(makes about 22 balls)
2 cups roasted peanuts
2 cups pitted dates
1 cup unflavoured pea protein
About 1.5 tsp finely ground salt (adjust to taste)
Water
Method
Soak pitted dates in boiled water for 10 minutes, drain and add to food processor. Add 3 tsp of water and blend until smooth. Add peanuts, protein and salt, blend until mixture starts to clump together (about 2 minutes). Add more water to achieve desired consistency. Roll into balls. I store half in the fridge and half in the freezer for later.
